VEGETARIAN NACHOS:
KAPHA-REDUCING
This dish can increase Pitta in excess, but reduces Kapha heavily and also balances Vata, owing to the spices which help outweigh the gaseous nature of the chilli beans.
Note: Owing to the spices and beans etc. used here, this dish should eaten less frequently, and is an example of combing spices to antidote foods. It is highly tamasic (dulling) to the mind in excess, owing to the nature of the pungent spices used (garlic etc.), but helps make the dish more digestive.
Ingredients:
1 Packet Nacho / Corn Chips
1 Can Chilli Beans
1 tblsp Ghee
3 Chopped Tomatoes
1 ½ tsp Rock salt
1 Small chopped onion
3 x Garlic cloves
1 tsp Mustard Seeds
2 tsp Cumin Seeds
2 tsp Corriander Seeds
2 tsp. Hing Powder
1 tsp. Cinnamon Powder
Method:
Place the Ghee (clarified) butter in a pot and add in chopped onion, chopped garlic cloves and rock salt, as well as Hing powder. This blend heavily helps reduce the Vata nature of the beans, which produces gas in the colon. Stir.
Blend the mustard seeds, cumin seeds and coriander seeds together into a fine powder (or crush in mortar until fine) and add to the mixture. Add some water if it starts to stick, and also add Cinnamon powder.
Then once blended in the post, add the Chilli Beans and Chopped Tomatoes and cook well, blending them with the spices. Then serve on nacho chips – sprinkling the chips with some rock salt, hing or cinnamon powder for digestion.
If you have Ginger, this can also be added, at the time of Onions and Garlic to reduce the nature of the beans.
